What is plant-based eating?

Plant-based eating focuses on deriving a significant portion of daily food intake from plants. This includes fruits, vegetables, whole grains, legumes, nuts, and seeds, while minimizing or eliminating animal products. The approach emphasizes whole, minimally processed foods that are rich in nutrients and fiber, promoting overall health and wellness. Plant-based eating not only supports physical health by reducing the risk of chronic diseases, but it also benefits the environment by lowering carbon footprints and conserving resources. This lifestyle encourages mindfulness in food choices, fostering a deeper connection to the food we consume and its impact on our bodies and the planet.

Why I became a plant-based chef

Necessity

For six months during Leukemia, I was prescribed a strict neutropenic diet, and it was a incredible learning experience. My healing body needed protein, fruits and vegetables, but I was restricted from eating anything that was potentially contaminated which translated into virtually nothing fresh. Instead of focusing on what was restricted, I focused on what was allowed and had much greater success. I needed to do better than hospital food, canned soup and my own “cooking”.

Survival

I never learned how to cook, and after cancer it was time, so I became a certified plant-based Chef. I learned how to create delicious, nutritious, and affordable plant-based versions of my favorite foods. Now, I rely on myself for healthy meals and it’s easier than you think, I’d love to show you how.
